Salami update.

A week after me actually buying the stuff, after phoning them every day, the suppliers of Schwarz Complete Cure are finally able to tell me how much sodium nitrite is in their product.

Sodium nitrite inhibits the growth of naughty-food-micro thingies in salami. Unfortunately it is also considered poisenous to people as well. Too little and germs will grow in your drying salami and then grow in the consumers of said salami, then they (the germs) eat your face off. Too much and the consumer dies anyway, but their body will be pretty well preserved. Sodium nitrite is tricky stuff apparently.

Today, having a bit of a pootle around the net, trying to find a local source of salmi casings, I discover that no lesser authority than that enterprising frenchman, Jacques Reymond seems to think it's okay to just load the buggers up with salt and go for it.


Many of you reading this will have a chance to be eating this stuff. Indeed if we don't sort out the fire situation before Festival, all we will have to eat will be salami, cheese and beer sticks.

So give it some thought, form some opinions and feel free to make reasonable, well considered suggestions.
